Moroccan Meatballs with Couscous

Serving Size: 6

Amount Measure Ingredient / Preparation Method
1 Box Couscous
1-1/2 Pounds Ground chicken
12 Whole Dried plums - pitted
1   Shallot -- coarsely chopped
1 Iinch Ginger -- peeled and chopped
2 Cloves Garlic
1 Teaspoon Cinnamon
1/2 Teaspoon Cumin
2 Tablespoons Olive oil
    Zest of 1 lemon -- grated

Cook the couscous according to the package directions.

Meanwhile, put the chicken, plums, shallot, ginger, garlic, cinnamon, and cumin in a food processor and pulse until finely choped. Transfer the mixture to a large bowl. With damp hands, form into 20 (1-1/2") meatballs

Heat the oil in a large skillet over medium-high heat. Add the meantballs and cook in batches, if necessary, until cooked through, 10-12 minutes.

Fluff the couscous with a fork and transfer to a platter. Spoon the meantballs over the top and sprinkle with the lemon zest.

Bring to Temple Isaiah in an oven-proof disposable container covered in foil and marked with the dish and the date.


Chocolate Chocolate Chip Cake

Amount Measure Ingredient / Preparation Method
1-1/2 Cups Self-rising flour
1 Teaspoon Baking powder
1 Teaspoon Vanilla extract
1/2 Cup Canola oil
3/4 Cup Sugar
3/4 Cup Sugar substitute
1 Teaspoon instant coffee -- microwaved in 3/4 C water for 1 minute
1   Egg
1/4 Cup Egg Beaters® 99% egg substitute
3/4 Cup Chocolate chips
1/2 Cup Wheat flour
1/2 Teaspoon Baking soda
1/2 Cup Cocoa
1/2 Cup Apple sauce

Preheat oven to 350 degrees. Place all ingredients in a large mixing bowl. Mix until thoroughly blended. Spray a bundt pan with oil. Pour batter into pan. Bake about 40 minutes, until toothpick inserted in the center comes out clean.

Note: Bring to the Temple wrapped in foil clearly marked with name of item.
